Salted Caramel Brownies

I am a huge lover of Caramel, I am that person who always orders a caramel Latte without fail in a coffee shop. There is just something about the rich sweetness which makes it a real treat. Using this as the base ingredient I thought what better way to celebrate Autumn than adding this to a Brownie and topping it with sea salt. The bitterness of the chocolate is complimented by this sticky caramel sauce - I mean there is nothing not to like from these Caramel Brownies.
Ingredients
185g Unsalted Butter
190g Dark Chocolate
80g Plain Flour
40g Coco Powder
3 Large Eggs
130g Caster Sugar
130g Soft Brown Sugar
Caramel Sauce (ready made or home made)
Sea Salt
Method:
Pre heat the oven to 180C/160C Fan. Line the baking tray with baking parchment.
Fill a saucepan half way with water and heat until the water is simmering to create a Bain-marie. Break 190g of dark chocolate and place in a bowl over the heat. Leave on the heat till the chocolate has completely melted and is silky smooth.
Whilst the chocolate is melting move onto the brownie batter. Mix together 185g unsalted butter, 130g caster sugar and 130g soft brown sugar once mixed thoroughly. Add 80g plain flour and 40g coco powder. Add the 3 eggs and mix.
Once the melted chocolate has cooled add to the brownie batter, make sure the chocolate has cooled as it may scrabble the eggs in the batter.
Pour the batter into the brownie tray. Add spoonfuls of caramel into the mixture and swirl into the batter. Sprinkle sea salt over the top ready to bake for 25 minutes at 180C. To check that the brownies are baked through, using a skewer ensure that there is no raw mixture left in the middle of the brownies.
Once the brownies are baked remove from the oven and leave to cool. Once the brownies are cooled spread a generous layer of the remaining caramel sauce onto of the brownies, sprinkle some more sea salt onto the top of the brownies. Cut into squares.
I loved making these, anything with caramel I enjoy baking and eating. I know this was a huge hit with my family and friends. The brownies were fudge and gooey and the caramel made them an extra special treat.
