S'mores Bonfire Cookies

With Autumn well and truly upon us the one thing I look forward to most is Bonfire night. There is something about bonfire night that brings people together over good food, drink and of course the fireworks. We all know what goes hand and hand with bonfire night marshmallows.

Ingredients

270g Unsalted Butter

270g Soft Light Brown Sugar

220g Caster Sugar

450g Plain Flour

2tsp Baking Powder

2 Large Eggs

2 tsp Vanilla Extract

350g Milk Chocolate/Chocolate chips

1 cup of Mini Marshmallows

Method

  1. In a large bowl mix together 270g softened unsalted butter with 270g soft light brown sugar until light and creamy. Gradually add the 220g of caster sugar until fully combined.

  2. Sift 450g plain flour with 2tsp of baking powder, gradually add to the butter and sugar. Mix until the mixture is a light cream colour.

  3. Add one egg at a time to the mixture with the vanilla extract. Dice 350g of chocolate (of your choice), add to the bowl alongside the cup of. mini marshmallows. Fold into the mixture ensure that the chocolate and the marshmallows are evenly distributed.

  4. Roll the cookie dough in between to pieces of non-stick parchment paper to create a long flat sausage shape. Twist the ends of the parchment to seal the cookie dough and place in the fridge to rest. Cookies should be rested for at least 30 minutes, ideally the longer you can leave the the better.

  5. Once the cookie dough has been rested pre heat the oven to 180C.

  6. Slice the dough into approximately 1.5 cm disks. Place a parchment sheet on a baking tray and place the cookie dough discs onto the tray spread the discs out as they may merge when cooking.

  7. Leave to bake in the oven for 15 minutes or until golden brown.
