Jaffa Cake Brownies

As a baker it can be incredibly hard to think of new ideas. My friend came to me and asked me to make some goodies for a charity event and they happened to mention that chocolate orange is one of there favourite flavour combination, so why not try the Jaffa cake Brownie. This brownie has Jaffa cakes baked into the brownies and is topped with a Orange Marmalade sauce. There is nothing not to like about these brownies.
Ingredients
185g Unsalted Butter
80g Plain Flour
40g Coco Powder
130g Caster Sugar
130g Soft Brown Sugar
190g Dark Chocolate
3 Large Eggs
2 tsp Orange Extract
Mini Jaffa cakes
Jaffa cakes
Orange Marmalade
Orange Juice
Method
Pre heat the oven to 180C/160C Fan/ gas 4 and line a brownie tin with baking parchment.
Fill a pan with water half way and place on a medium heat. Add the 190g of dark chocolate into a bowl place the bowl on the pan to create a bain-marie, leave the dark chocolate to melt until silky smooth.
Whilst the chocolate is melting move onto the brownie mixture. In a bowl add the 185g of unsalted butter, add the 130g caster sugar and 130g soft brown sugar and whisk. Add the 3 large eggs and the 80g of plain flour and sieve in the 40g of coco powder. Mix thoroughly to create a batter. Once the chocolate is fully melted and has cooled down add to the brownie batter and add the 2 tsp of orange extract mix thoroughly.
Place Jaffa cakes in the bottom of the brownie tray, ensure there is an even distribution of Jaffa cakes. Pour the brownie mixture into the tray and bake for approximately 15 minutes, remove from the oven and scatter the miniature Jaffa cakes on the top of the brownie mix and continue to bake for a further 10 minutes. Once baked leave to cool.
To create the drizzle, on a medium heat add three large tablespoons of orange marmalade into a pan, add a tablespoon of orange juice, stir until it becomes a sauce like consistency. Once the brownies have fully cooled add the drizzle over the top of the brownies.
Cut into pieces ready to serve.
This is a fab twist on a classic brownie.
