Jammy Dodger Blondies

This is the most instagramable bake you will ever make. When you are tired of making normal brownies it is time to try this recipe, super easy and goes down a treat.


Ingredients

180g Melted Unsalted Butter

225g Light Brown Sugar

2 Large Eggs

225g Plain Flour

150g White Chocolate Chunks

Jar of Strawberry Jam (or homemade if you're going the extra mile)

1 packet of jammy dodgers

1 packet off mini jammy dodgers


Method

  1. Pre heat the oven to 160 C (350 F). Line the brownie tin with greaseproof paper for ease when removing the brownies as these brownies can be gooey.

  2. Fill a small pan with water roughly half full and place on a medium heat. Add the 180g of unsalted butter to a bowl, place on top of the pan to help melt the butter. Once cooled begin to add the soft brown sugar and whisk gradually. By adding the sugar gradually this will help ensure the batter is smooth.

  3. Gradually add the 210g flour to the butter and sugar mixture. Add one egg at a time and whisk well, ensure there is no remnants of egg yolk.

  4. Break 150g off white chocolate (cooking chocolate does work best) into small chunks and mix into the mixture. When adding the chocolate the mixture may become stiff this is nothing to be concerned about.

  5. Line the bottom of the brownie tin with Jammy Dodgers, spacing them evenly, you may wish to break them or leave whole depending on your preference. Pour the batter on top and break more jammy dodgers into the mixture. Swirl in approximately 2/3 table spoons of strawberry jam into the mixture and scatter the mini jammy dodgers on the top.

  6. Place into he pre-heated oven for approximately 30 - 40 minutes. They should be a golden brown and should be baked through, to test use a skewer little batter should remain when tested.

  7. Leave to cool and remove from tin, cut into slices, depending on your preference these can be as big or as small as you like.
